The installed capacity of food and vegetable processing industry in the country has increased from 11.08 lakh tonnes in 1993 to 23.28 lakh tonnes as on April 1, 2004. The utilization of fruits and vegetables for processing in the organized and unorganized sector is estimated around 2 per cent for the total production.
Over the last few years, there has been a positive growth in ready-to-serve beverages, fruit juices and pulps, dehydrated and frozen foods, vegetable products, tomato products, pickles, spice pastes and curried vegetables.
